Buffalo Cauliflower Bites

Ingredients:
- 2 heads of cauliflower (about 8 cups when chopped)
- 2 eggs
- 1 cup almond flour
- ½ tsp salt
- 2 tsp garlic powder
- 1 tsp Trader Joe's green onion salt (optional)
- 1 cup buffalo sauce (We used Frank's Red hot)
Instructions:
1. Preheat oven to 425F and line a baking sheet with parchment paper
2. Wash and chop cauliflower into different sizes. We like a mixture of big and small
3. In a small bowl, wisk the eggs
4. add the cauliflower and egg to a large ziplock bag and shake until evenly coated
5. In another small bowl, mix the almond flour, salt, garlic powder and green onion salt
6. add the flour mixture to the cauliflower and shake well until evenly coated
7. Place cauliflower in a flat layer on baking sheet and bake for 25-30 min or until lightly brown
8. Take out of the oven and let cool for 5-10 minutes
9. Pour 1 cup of buffalo sauce over the top of cauliflower and toss to coat (we like to put the cauliflower in a big mixing bowl to make sure we coat every piece well then put back on baking sheet)
10. Broil for 5 minutes to get the cauliflower crispy (watch closely so it doesn't burn)
11. Enjoy with a side of ranch of blue cheese dressing, or simply by themselves.
