Lisa's Keto Ice Cream

Makes 8 servings.


Sugar-free Sweetened Condensed Milk:

2 ½ cups heavy whipping cream

¼ cup butter

¾ cup granulated sweetener of choice

1 tsp vanilla extract


  1. In a small saucepan, add all ingredients and bring to just before boiling over medium heat, whisking constantly.  Reduce heat to low and simmer till thickened, stirring frequently, about 30 minutes.
  2. Remove from heat, pour into a metal bowl and place inside a larger metal bowl full of ice.  Place in fridge till cold.

Ice Cream:

2 cups heavy whipping cream

½ cup Swerve confectioners sweetener

1 tsp. Sea salt

2-mini bottles of liquor, your choice (keeps this churn-free ice cream from freezing solid)

1 ½ tsp. desired extract flavoring

1 recipe sugar-free sweetened condensed milk, above


  1. In a large mixing bowl, whip cream, sweetener and salt till stiff peaks form.
  2. Add half the whipped cream to the chilled sweetened condensed milk mixture and whisk to incorporate.  Add remaining whipped cream and whisk till completely smooth.  Add alcohol and additional extracts or flavorings as desired.
  3. Pour mixture into a freezer safe container and freeze overnight.

Flavors suggestions:

Vanilla- add 2 tsp. vanilla bean paste or powder and Frangelico or Pinacle

Coffee- add 2 shots espresso and coffee liqueur 

Mint Chocolate Chip- add mint extract, Creme de Menthe or Irish Cream liqueur and grated sugar-free chocolate bar.

Coconut- add coconut extract, coconut liqueur and ½ cup unsweetened coconut

Peanut Butter- add ¼ cup powdered PB of choice

Chocolate- add ½ cup cacao powder and chocolate liqueur

Strawberry, Raspberry or Blueberry- add 1-2 cups of macerated fruit of choice. (fruit mixed with 1 Tbs. sweetener, 1 tsp. Balsamic vinegar, dash salt)

Matcha- add ¼  cup culinary matcha powder
